May is Asian American Pacific Islander month, or AAPI for short, a time to celebrate the Asian and Pacific Islanders in the United States and their contributions to the history of this country. By recognizing the culture, history, and achievements of Asian American and Pacific Islanders, we can broaden the understanding of their countries and cultures, as well as enhance the appreciation for all that they have given to make this country great.
As is the case with many commemorative months, AAPI originated with Congress. In 1978, Congress passed, and President Jimmy Carter signed into law, a joint resolution declaring a week in May as “Asian/Pacific American Heritage Week.” This was later expanded to a month, and in 1992, May was designated as Asian/Pacific American Heritage Month.
At Gentry Park Senior Living Bloomington, IN, we will be celebrating by honoring the countries of India, China, Thailand and Korea.
To celebrate India our team has prepared butter chicken, or traditionally known as murgha makhana, served over rice with a side of naan bread. For our celebration of China, we have prepared a steamed bun filled with char Siu, Cantonese barbecued pork, and freshly sliced cucumbers. Our Korean cuisine includes kimchi-jeon, a pancake made from Korea’s traditional side dish consisting of fermented cabbage and other vegetables. And lastly for Thailand, we dined on Thai crab fried rice.
We decided on the dishes we prepared based on what families in the respected countries traditionally consume at home growing up. Many families in all countries have traditional home cooked recipes they pass down just as we carry on our own traditions we love as children.
As a culinary director, I feel we should celebrate Asian American Pacific Islander Heritage Month. It shows respect for the development of the many different cuisines the Far East has to offer. Many of these cuisines have been around for thousands of years. It’s important to recognize the deep roots these cuisines hold.
